Mean, Green Smoothie Machine
This smoothie is sure to get your morning started with a kick!
I adore this smoothie because it feels like I have given my body a yummy salad, first thing in the morning, without any effort. It is loaded with leafy greens and fresh tasting ingredients that will wake up your taste-buds.

Mean Green Smoothie (Low Lectin)
Ingredients
- 1 cup baby spinach
- 1/2 cup leafy green mix (arugula, baby greens, spring mix, etc.)
- 1 mint sprig with stem
- 1/2 avocado
- 4 tbsp freshly squeezed lemon juice
- 1 tbsp fresh cilantro
- 1/4 cup ice cubes
- 1 cup tap or filtered water
Instructions

Throw all of the ingredients into a high powered blender.

Blend until all of the ingredients are a smooth and fluffy green texture.
Recipe Notes
Feel free to get creative and choose leafy greens or fresh herbs that suit your taste-buds. 3 - 6 drops of stevia extract can be added for a touch of sweetness.
I first came across a version of this recipe from the book The Plant Paradox by Dr. Gundry. I really enjoyed reading Dr. Gundry’s book and will occasionally post more recipes that are low lectin and Dr. Gundry approved. I will also link Dr. Gundry’s book on this site in an update soon.
Generally, I tweak my smoothie recipes to suit my mood for that day. If I am feeling that I need more fat to carry me through the morning then I’ll add more avocado. If I need more of a zip to wake me up then I’ll add more lemon or arugula. I find smoothies are really great that way. You can totally customize them!
