If you saw my post, Pumpkin Energy Balls (Fail!), then you might remember that I bought Vega’s Vanilla Protein Powder + Greens and was none too impressed by it.

I really should have known. I have tried this type of protein powder before, in other flavours, and they always taste quite chalky. I highly recommend Vega’s Chocolate Protein Powder (NO greens added to it). It is very tasty. Something about when they add the greens in gives the powders a hint of *ick.*

But, all that ranting aside, long story short, I have embarked on trying different recipes to hide the *ick* taste. So far, I really like this one! It was good the day that I made it, and even the next day when I had it as a Pumpkin Pie Pudding at work. I was very happy to be “pudding” it into my mouth. — I’m so sorry. Sometimes I just can’t resist.

Anyways! Without further ado, here is the magic that went into this tasty treat.

Pumpkin Pie Smoothie

Prep Time 5 minutes
Servings 2

Ingredients

  • 3/4 cup coconut milk
  • 1/2 cup coconut yogurt
  • 1 cup pumpkin puree
  • 1/2 avocado
  • 1/2 banana
  • 1 scoop Vega Vanilla Protein Powder + Greens
  • 2 tsp cinnamon
  • 2 tbsp maple syrup
  • 1 tbsp cashew butter (or other nut butter)
  • 1 tbsp coconut oil
  • 1 cup ice cubes (optional)

Instructions

  1. Combine all ingredients in a blender and blend. Add water or ice cubes to reach desired consistency. 

This recipe is pretty flexible. If you want to take away some of the sweetness then you can use half of the maple syrup. If you want to try different nut butters then go right ahead. Almond milk can also be used instead of coconut milk.

I used Yoso Coconut Yogurt in this recipe. It’s one of my favourite treats. Throw some berries, granola, and a drizzle of honey on this in the summer and it’s a perfectly light breakfast or snack. It was the perfect addition to this smoothie. I highly recommend picking this stuff up next time you see it in stores, super worth it!

I only recommend using ice cubes if you have a high powered blender. For the longest time I only had a magic bullet. Don’t get me wrong, I loved that little guy. I loved it so much I bought another base when my first one bit the dust. Just this last summer I upgraded my blender to a high-powered blender, and let me say, the difference is NIGHT AND DAY!
